Savour Vietnamese Cuisine, 11 days / 10 nights

Ho Chi Minh City – Cu Chi Tunnels – Mekong Delta – Da Nang – Hoi An – Hue – Hanoi–Ha Long Bay

Itinerary:

Upon arrival, welcome guests at airport & transfer to hotel for check in & relax.

Breakfast at hotel.
Visit to Cu Chi Tunnels, well-known under American War Time–an underground network of tunnels 200km long. During the war of independence, Vietnamese guerrillas built the labyrinth of narrow tunnels virtually underneath U.S. bases, using them to hide during bombing raids and to stage surprise attacks. Spend time explore the tunnels then test your marksmanship with an AK rifle at a local rifle range (optional with surcharge)
Back to Ho Chi Minh City & then visit Independence Palace, War Museum which primarily contains exhibits relating to the American phase of the Vietnam War, and is a major tourist attraction.
Continue to visit Notre Dame Cathedral (due to construction in process, can only watch from the outside) & General Post Office – the ancient French colonial architecture.
This evening, discover Ho Chi Minh City by night from the back of a Vespa scooter. Start the journey with fun drive around city center & visit the must-see landmarks such as Notre Dame Cathedral & General Post Office which were designed by Gustave Eiffel. After that, we will drive you to one of the most famous street food areas in Saigon with the considerable diversity in the style of the cuisine & local culture. Here we will take a short walk to explore & understand more about the lifestyle of local people and of course, we cannot skip chance to try a variety of Saigon authentic local food. We continue on driving to the biggest flower market which is considered as wholesale flower market in Saigon. Cool off with 02 different types of craft beer with snack at a local micro-brewery.

This morning, depart to Cai Thia located in Cai Be, Tien Giang Province.
On arrival, start cycling for 1 or 2 hours on small quiet paths around this beautiful & peaceful village of Hoa Loc, cruise further to An Binh Island in Vinh Long Province.
Enjoy lunch with Mekong’s specialties at Ut Trinh’s home restaurant.
Walking around the family’s garden to see many kinds of vegetables & fruits. Then sit down for a cup of tea while listening to the traditional folk music of Mekong Delta. Later, take the rowing sampan to go deeper inside the maze of small & quiet canals. Cruise to visit the brick kilns & see how the local people create lovely potteries & burn the bricks using traditional method
Return to Vinh Long pier where your driver will take you back to Ho Chi Minh City.

Transfer guests to airport for domestic flight to Da Nang.
Upon arrival, drive ahead to Hoi An Ancient Town – the charming & historic city of Hoi An, known as one of South-East Asia’s major international ports of call for Dutch, Portuguese, Chinese, Japanese and other trading vessels with name of Faifo: ancient houses, Japanese Covered Temple Bridge, Phuc Kien Temple.
Shopping at Hoi An colorful market with stalls brimming with local specialties, silk & art craft.
Dinner at local restaurant.

Start our morning with a boat trip from “Vy’s Market Restaurant” to Hoi An’s colorful & bustling central market. Here we will learn about: the uses of different fresh noodles, how to know and buy fresh fish, fresh herbs, fresh and dried spices and their uses in our recipes, rice and different grains.
Return to Vy’s Market Restaurant for join-in cooking class. Here you can hear, smell, see, touch, taste and interact with variety of food making processes.
The cooking lesson runs about 2.5 hours–the teachers first show each dish before you prepare the same dishes yourselves. After the lesson we enjoy what we have cooked and then you will receive a copy of the recipes and do it again when back home.
This afternoon, leave your modern life away today, take a leisurely 4km bike ride to Tra Que vegetable village & then wearing farming clothes as locals, raking the ground, sowing, watering greens, picking greens & many more gardening activities. You will have lots of fun & interesting moments when being in this village. This is a great way to see how locals here live & how they love their job. Bid farewell to your host family & transfer back your hotel.

After breakfast, drive to Hue via Da Nang, stop over on top of Hai Van Pass for magnificent view over Lang Co Laguna.
Start your tour with Imperial Citadel, – the UNESCO listed site including Flag Tower, Ngo Mon Gate, Nine Dynastic Urns, Nine Holy Cannons, Thai Hoa Palace and the Forbidden Purple City.
Boarding a boat trip along the Perfume River, admire the landscape & enjoy the sunset. En route, stop for visiting the iconic Thien Mu pagoda (Heavenly Lady pagoda–symbol of Hue) which’s centerpiece, the 21m high tower represents the seven reincarnations of Buddha.
We cannot skip the royal dinner at Ancient Hue restaurant, enjoy the traditional performance as well as sumptuous royal cuisines, this is great experience that can not be found any where else in Vietnam.

This morning, we leave the center of Hue & its historic buildings for a bicycle ride through the bucolic Vietnamese countryside to Thanh Toan Village (8km away), to visit 200-year old Thanh Toan Tile – Roofed Bridge. At the village, you have more experience of seeing agriculture museum & then bike around the village to see more of local temples.
Return Hue for relax.

Transfer guests to airport for domestic flight to Hanoi.
Hanoi is full of charm with colonial buildings & scenic lakes. Commence the tour on the buggy around Hoan Kiem Lake to enjoy its legend including The Huc Bridge & Ngoc Son Temple, then drive to Old Quarters (36 ancient wards & street) with themed streets, ancient temples & pagodas. Drive through different corners of the legendary capital to explore the best scenes of daily life &history.
Street food plays an important part in the Hanoi’s unique culinary, let’s discover the culture of Vietnam through local food. Wandering around Old Quarter to explore reality Hanoi by night, sample delicious Vietnamese cuisine just like the locals do — on the streets & chatting with street vendors, of course you cannot skip a draft of Ha Noi cold beer.

Depart for the 4-hour drive to Ha Long Bay, journey there through the rich farmlands of the Red River Delta, observe daily life of Vietnamese villagers
Check-in on board with welcome drink.
Enjoy lunch on board with fresh seafood.
A fantastic cruise in Halong Bay – the UNESCO World Heritage Site, passing through so many amazing islets. Enjoy some visits and/or activities (depending on each boat’s itinerary) or just spend some time relaxing on board.
Towards the end of the day the boat sets anchor for the night among the karst formations.
Dinner & Overnight on board.

Light breakfast on board (cake, pastry, milk, coffee…).
Enjoy your fresh morning in the middle of the bay, the sunrises on Halong with Tai Chi exercise on sundeck.
The wholesome brunch is served while the vessels cruises slowly through the magnificent rock formations & back towards port.
Disembark in the afternoon & drive back to Hanoi, en route visit potter’s village of Dong Trieu and have an experience with the potter’s wheel.

Free at leisure until transfer guests to airport for flight back home.

+ In the occasion of bad weather conditions, e.g. high winds, monsoons, thunderstorms, cyclones, storms, etc., the management board has the authority to cancel all cruises to guarantee the safety of tourists. Should this happen, accommodation will be at Ha Long City Hotel instead.
